Truffles!

I thought about doing a post about our favors before this, but when I tried to take a picture of the test run it came out mildly icky looking.
I made chocolate (white chocolate drizzled) and Kahlua (cocoa covered) for the trial truffles.

So I scratched that idea. Plus I thought it might be nice for most people to be surprised by the favors.

In the beginning, I had huge ideas for the favors, but somewhere along the way I got realistic. One thing about our favors that stayed constant was that they should be edible. Edible favors are almost always everyone's favorite type of favor. I also knew that I wanted to make our favors because putting skittles in a tiny container is just too easy for me.

One day while perusing allrecipes.com I found this truffle recipe.

Easy Decadent Truffles
8 oz package of cream cheese
3 cups of powdered sugar
3 cups of chocolate chips, melted
1 1/2 tsp of vanilla

In a large bowl, beat cream cheese until smooth. Gradually beat in confectioners' sugar until well blended. Stir in melted chocolate and vanilla until no streaks remain. Refrigerate for about 1 hour. Shape into 1 inch balls.


To flavor truffles with liqueurs or other flavorings, omit vanilla. Divide truffle mixture into thirds. Add 1 tablespoon liqueur (almond, coffee, orange) to each mixture; mix well.

Makes 60

Seemed easy enough, and one batch made A LOT of truffles. If I wanted everyone to get 3 truffles, I would only have to make 6 batches. I could also make them a week in advance and store them in the fridge until the day before the wedding and packaging them then. After the trial truffles I was ready to make them.

I decided on 3 different flavors: chocolate, mint chocolate, and white chocolate. I thought about the fact that some people may be allergic or not like chocolate, but I also knew that most people enjoy chocolate, and you can't please everyone. Also the three flavors are so clearly me and DH. I live for chocolate. DH lives for white chocolate, and we both really enjoy mint.

In addition to my chocolate trials I also did a really small white chocolate batch. I knew that white chocolate is not as strong of a flavor as chocolate, and this could cause the truffles to taste bad if I didn't alter the ingredient proportions. I was correct. For the white chocolate truffles, I doubled the amount of white chocolate and powdered sugar in order to tone down the cream cheese flavor.

I started making the truffles the weekend before when half of my bridesmaids were in town for the bacholorette party. We got through have of the truffles and finished the rest on the Thursday before the wedding when everyone was in town to help.

For the packaging I wanted green cellophane and gold twist ties. Unfortunately, I was unable to find gold twist ties anywhere except online. The shipping cost of the twist ties would have been more than they are worth. So I ended up just getting gold ribbon to tie them together.

And the end result.
I have no other pictures of them than this mildly creepy picture of one of our groomsmen. You can see the white chocolate one clearly through the green cellophane. I got a lot of complements, and I think they turned out pretty well.
